Zucchini Pizza Recipe

This is one of those recipes that takes a favourite comfort food- pizza!- and puts a healthy spin on it. Swapping out a traditional crust for slices of zucchini makes for a lighter and more nutritious option without missing out on this meal time fave. Over the Summer we were picking them fresh out of the garden and I could barely keep up with them, so getting a little creative was the result. I shared about these on Instagram Stories the night I made them and they were such a hit that I wanted to post them here on OHP. Using zucchini in lasagne and as a pasta alternative has been popular for some time, so it got me thinking why not try it out for other meals? I had originally planned on making these as individual pizzas with large round slices of the squash (that’s how big these suckers were from the garden!), but opted to slice them lengthwise to fit more of the good stuff on top. These take minutes to make and are also a great after school snack. If you’re gluten free or trying to cut back on carbs this is an easy option that doesn’t compromise on flavour. Ingredients

3 large zucchini 

2- 3 cups pizza sauce

2 cups grated cheese

selection of favourite pizza toppings

Directions

  1. Preheat your oven to 350 degrees and line a baking sheet with parchment paper.
  2. Slice your zucchini to 1/8- 1/4″ thick (I think mine ended up somewhere in between) and bake for approx 10 minutes or until they are partially cooked/ just starting to get soft. Remove from oven.
  3. Prepare your pizza toppings- slice, dice, grate, etc.
  4. Spread the pizza sauce over the zucchini slices followed by the toppings and grated cheese.
  5. Bake the zucchini pizzas for another 10 minutes or until the cheese has melted.
  6. When ready, pop them out, use a spatula to serve, and enjoy!
